French onion soup is tasty, but not much of a main course on its own...so we added savory cheese tortellini, to put an Italian twist on this French classic.
Ingredients
- 1 lb onions
- ½ cup fresh thyme
- 4 tbsp butter
- 2 tbsp olive oil
- 2 tbsp minced garlic
- 3 cups vegetable broth
- 1 (9 oz) pkg cheese tortellini
- ¼ cup shredded Parmesan cheese
Steps
- Cut the onion into thin rings and pick the leaves from the thyme.
- Heat the butter and oil in a large, heavy pot. Add the onions, garlic, and thyme.
- Cook, stirring occasionally, for 5 min. or until onions are soft and begin to caramelize.
- Add the broth plus 3 cups water and bring to a boil. Reduce the heat and simmer for 10 min. Season with salt (in moderation) and pepper.
- Add the tortellini and cook for 5 min. or until tender. Divide the soup evenly among 4 bowls and top with shredded Parmesan cheese.
