Homemade Caesar dressing is quick and easy with help from a bit of mayo. Serve this salad as an appetizer or add cooked shrimp or chicken to turn it into a fast and simple dinner or lunch.
Ingredients
- 1 clove garlic
- 2 anchovies, finely chopped, or 1 tsp anchovy paste
- 2 tbsp lemon juice
- 2 tbsp mayonnaise
- 2 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 2 tbsp olive oil
- ¼ cup finely grated Parmesan, plus more for garnish
- 3 romaineĀ hearts
- 1 cup garlic croutons
Steps
- Into a medium bowl, with garlic press, crush the garlic and add the anchovies. With a fork, mash the anchovies and garlic. Add the lemon juice, mayonnaise, Dijon, and Worcestershire. Whisk to combine. Whisk in the oil, then the Parmesan. Season with salt and pepper to taste.
- Trim the romaine hearts and separate the leaves. Arrange one layer of leaves on a large platter. Drizzle with some of dressing. Top with another layer of leaves. Drizzle with more dressing. Lightly crush the croutons and sprinkle on top.
