Rich avocado, juicy berries, and a sweet homemade poppy seed dressing adorn this quick arugula salad.
Ingredients
- ½ small red onion, thinly sliced
- 2 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 green onion, cut up
- 2 tsp sugar
- ½ tsp dry mustard powder
- 3 tbsp canola oil
- 1 tbsp poppy seeds
- 6 cups packed arugula
- 1 avocado, peeled, pitted, and diced
- 2 cups strawberries, hulled and quartered lengthwise
Steps
- Soak the red onion in a small bowl of very cold water 10 min.
- Meanwhile, in a blender, purée the vinegar, lemon juice, green onion, sugar, mustard powder, and oil until smooth. Season with salt and pepper to taste. Stir in the poppy seeds.
- Drain and rinse red onion. Pat dry with paper towels. Arrange the arugula on a large serving platter. Scatter onions, avocado, and strawberries on top. Drizzle with poppy seed dressing.
