- 1 ¾ cups Nature's Promise Organic Low-Sodium Chicken Broth
- 1 cup long-grain white rice
- 1 lemon
- 2 tbsp butter
- 3 tbsp chopped dill
- In a medium pot, heat the broth to a boil on high. Stir in the rice. Cover with lid and reduce heat to low. Cook 20 min., until broth is absorbed. Remove pot from heat and let sit, covered, 5 min.
- Meanwhile, grate 2 tsp zest and squeeze 2 tbsp juice from the lemon. When rice is done, stir in the butter, lemon zest, lemon juice, and dill. Season with salt and pepper to taste.
