Zucchini adds moisture while mini chocolate chips add a touch of sweetness to these bite-size breakfast treats.
Ingredients
- 1 medium zucchini
- ¾ cup flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ cup sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ stick butter, melted
- ¾ cup mini chocolate chips
Steps
- Preheat oven to 350°F. Use a box grater to grate the zucchini.
- In a bowl, combine flour, baking soda, cinnamon, and a pinch of salt. In a separate bowl, whisk together sugar, egg, vanilla, butter, and zucchini. Add flour mixture to the zucchini mixture, gently stirring until fully combined. Fold in chocolate chips.
- Using a tablespoon, divide batter between cups in greased mini muffin tin and bake for 15 min. until a toothpick inserted into the center comes out clean.
