This rich flourless chocolate cake is so delicious that you’ll make it all year round, not just at Passover.
Ingredients
- ½ cup margarine
- ⅔ cup bittersweet chocolate chips
- ¾ cup sugar
- 3 large eggs
- ½ cup cocoa powder
- ½ tbsp potato starch
- ½ cup sugar
Steps
- Preheat the oven to 350°F. Grease a 9-inch cake pan and line the bottom with parchment paper. In a microwave-safe bowl, combine the margarine and chocolate chips. Microwave on high for 1 min. and stir. Continue microwaving, in 15 sec. increments, until margarine and chocolate are melted. Stir ingredients to combine.
- In a large bowl, whisk together the sugar and eggs. Add the melted chocolate and whisk to combine. Sift in the cocoa powder and mix until smooth. Pour the chocolate mixture into the greased baking dish. Bake for 20 min., or until a toothpick inserted into the center comes out clean. While the cake bakes, combine potato starch and sugar in a food processor and whiz until it has the consistency of confectioners sugar. Allow mixture to settle before opening lid. Allow cake to cool for about 10 min. and dust with 2 tbsp sugar mixture. Save the rest of the sugar mixture for another use.
